Nguyen Cong Chung, executive chef and director of Food & Beverage at Sheraton Hanoi Hotel, said, "Travelling around the globe and seeking unique flavours from every corner has been deeply nurtured behind the name Hemispheres. With our new image and menu, we hope that our guests can vividly recreate this experience and discover the unexpected delights that we have prepared for this reopening."

First gracing the culinary landscape in 2012, the restaurant has undergone a remarkable evolution over the past decade. Hemispheres’ culinary generations have consistently delivered exceptional dining experiences - a harmonious fusion of global cuisines and cultural exchange, all nestled within an unmistakable atmosphere. The restaurant's vibrant open kitchen serves as a dynamic stage, allowing diners to immerse themselves in the rhythm and artistry of each meticulously crafted dish. After a three-month hiatus to refurbish and refresh the restaurant’s space, Hemispheres reopened on September 11, showcasing changes in interior design, a new menu, and new brand elements.

The new interior design significantly conveys the key concept of the restaurant - a place that opens up endless explorations of the world’s cuisines. From intimate small tables perfect for romantic dates to flexible arrangements for larger gatherings and important events, the setup ensures privacy and comfort, allowing each group of guests to enjoy their dining experience fully.

Hemispheres Steak & Seafood Grill has received the ‘Michelin Selected’ title by the Michelin Guide for two consecutive years. The restaurants in the Michelin Guide are independently evaluated by renowned anonymous Michelin appraisers, through multiple rounds of testing, against five globally consistent criteria: product quality; cooking skills; taste harmony; the chef's personality reflected in the dish; and its consistency over time and across the menu. Chef Chung believes that, "the trust and support of our guests has become the fuel that keeps our passion striving brightly year after year, serving as the clearest testament to the achievements that we have attained."

To celebrate this success, the restaurant proudly introduces a version of the ‘Michelin Selected’ set menu, taking the diners through five distinctive 'stations', much like a voyage to discover novel tastes, choosing the highest quality ingredients and exquisite cooking techniques.

The experience begins with a bold combination of fresh Canadian oysters paired with sherry and shallot vinaigrette, chilli sauce, and lemon wedges. This is immediately balanced by creamy slices of foie gras, served with honey citrus biscuit and aromatic saffron milk foam and black truffle.

Accompanying this is the classic lobster aioli, served with snow crab and aioli tartine, providing a perfect prelude before coming to the most premium part of the menu.

The centrepiece of this menu is the Hitachi Wagyu A5 Beef Sirloin, accompanied by truffle mashed potatoes, asparagus, and shiitake mushrooms, paired with a delicate Japanese sauce.

Conclude the journey with a flawless entremet prepared by the restaurant's pastry chef. Within the mirror glaze are the layers of flavours derived from Earl Grey mousse, tangy-sweet orange, and pineapple comport.

For the à la carte menu, when ordering an appetiser or soup alongside any main dish, guests will receive a complimentary dessert, this exclusive offer is available until October 31.
