Sheraton Hanoi's Hemispheres Steak and Seafood Grill, recognised in the Michelin Guide 2024, is set to redefine the city's dining scene in the coming months with two exclusive culinary experiences.

Designed for discerning palates, these events will showcase the restaurant’s dedication to sophisticated flavours, meticulous craftsmanship, and world-class hospitality. Across April and May, guests will have the opportunity to explore a specially curated Canadian seafood menu, as well as an exceptional wine pairing dinner featuring selections from the prestigious Francis Ford Coppola Winery.

On the evening of April 8, Hemispheres will present a one-night-only wine pairing experience, offering a rare chance to savour the intersection of fine dining and acclaimed Californian winemaking. Each of the five courses has been meticulously crafted to complement a wine from the Francis Ford Coppola Winery, an estate founded by the legendary filmmaker behind The Godfather.

The journey begins with an Alaska King Crab Tartare, its delicate sweetness lifted by the crisp effervescence of Sofia Blanc de Blancs Sparkling, a refined sparkling wine named after Coppola’s daughter. As the evening progresses, the interplay of flavours deepens, with pan-fried Hokkaido scallops in vermouth sauce elegantly paired with the Diamond Collection Pinot Grigio, a well-balanced white with refreshing acidity.

Building on these refined notes, the meal continues with a rich and earthy Local Mushroom Delice, where the umami of truffle emulsion and the creaminess of Dalat mozzarella find harmony with the Director’s Cut Chardonnay, a bold yet refined selection from Sonoma Coast.

The menu then turns to robust flavours, as a pan-grilled duck breast with orange sauce meets the vibrancy of Director’s Cut Pinot Noir, while a BBQ US prime tenderloin with black garlic sauce is elevated by the depth and structure of Director’s Cut Cabernet Sauvignon.

To bring this sensory journey to a close, a chocolate lava cCake with rum and raisin ice cream and a red wine berry compote serves as an indulgent final note, rounding out the evening’s exploration of balanced pairings and nuanced tastes.

Priced at $80 per person, excluding tax and service charges, this intimate experience is available for a limited number of guests, with reservations highly recommended.

Following this exclusive event, Hemispheres will turn its attention to the finest cold-water seafood from Canada, a country renowned for its pristine waters and high-quality produce. Carefully curated to highlight the natural sweetness and freshness of these ingredients, the Canadian Seafood Set Menu will be available from early May, offering guests another opportunity to indulge in elevated dining.

The experience begins with a classic Caesar Salad enhanced by the buttery richness of Canadian smoked salmon, its flavours deepened by crisp bacon and delicate Parmesan flakes. The menu then moves into bolder territory with Canadian mussels simmered in a spicy garlic miso sauce, a dish that balances umami depth with the bright freshness of spinach and the crisp texture of toasted bread.

At the heart of this menu is the Garlic Butter Grilled Canadian Lobster, a delicacy that exemplifies both luxury and restraint. Grilled to perfection and infused with the aromatic richness of garlic butter, the dish is further elevated by black caviar, edamame, and a smooth green asparagus purée, enhancing the lobster’s naturally sweet profile.

For dessert, the meal takes a lighter, fragrant turn with an Earl Grey Tea Mousse, its floral essence complemented by a citrus-infused pineapple and orange compote, leaving a refreshing and balanced finish.

Priced at $64 per person, excluding tax and service charges, this menu invites guests to explore the depths of Canadian seafood through a lens of refined culinary artistry.

With these two carefully curated experiences, Hemispheres Steak & Seafood Grill reaffirms its position as one of Hanoi’s premier dining destinations.
