Starting in 2024, Le Méridien Saigon will host “Pause + Savour” Chefs' Table events, featuring a fusion of renowned culinary traditions from various global epicentres.
The initial chapters will draw inspiration from Asia, featuring iconic cuisines such as from Korea, Hong Kong, Taiwan, and Japan. This will be accomplished by partnerships with talented culinary professionals from renowned hotel brands belonging to Marriott, both domestically and internationally.

The first episode of the Chefs' Table series "Pause + Savour," named “Seoul Inspiration,” will kick off by featuring the culinary collaboration between two Le Méridien hotels, one located in Seoul, Korea and the other in Ho Chi Minh City, Vietnam. The chefs from both cultures have meticulously hand-picked all the ingredients for this dining experience.
The guest chef who opens the first chapter of culinary experiences will be executive Chef Theo Park of Le Méridien Seoul Myeongdong. With over two decades of experience in prestigious hotel brands and a deep immersion in the culinary scene of Seoul, Chef Theo Park draws endless inspiration from Korean cuisine to create unforgettable dining experiences for his guests.
Bringing a touch of elegance and finesse, the first chapter with Chef Phi Cong and Chef Theo Park is set to highlight the best of Korean and Vietnamese cuisine at BARSON and Latest Recipe Saigon. Using only the finest ingredients and incorporating distinctive flavours, the two talented chefs promise a culinary experience like no other.
Le Méridien Saigon is hosting Korean Week from April 22 to 28, in collaboration with Shinhan Bank Vietnam, Sulwhasoo Vietnam, and WineCellar Vietnam.
During this time, all the hotel’s outlets, including BARSON, Latest Recipe, Boujee Lounge, and La Victoire, will come together to offer various enticing culinary events.
At BARSON, a dining bar located on G-floor of the hotel, Chefs' Table Tasting Dinner will be available on April 25, 26, and 27. The tasting menu for this special event has been carefully crafted by the talented executive chefs Huyen Ha from Le Méridien Saigon and Le Méridien Seoul Myeongdong, well-paired with renowned wines selected to elevate the flavours by the head sommelier at Le Méridien Saigon.
