From October 13-14, Regent Phu Quoc will host the highly acclaimed chef de cuisine Matteo Ponti from Braci, a renowned Michelin-star Italian restaurant that has been making waves on Singapore's dining scene.

Collaborating with Regent Phu Quoc's own chef de cuisine, Daniel Huynh, these two culinary experts will curate an exclusive series of Mediterranean dinners that promise to be a sensory delight.

Chef Matteo, whose culinary journey began at the Michelin-starred Caffè Groppi at the young age of 15, has established himself as one of the most exciting chefs in Singapore. After successfully earning a Michelin star for 28 Wilkie in 2021, he has now embarked on a new adventure at Braci.

Looking ahead to October, chef Matteo Ponti eagerly anticipates showcasing his creativity and daring flavours at Regent Phu Quoc. Alongside chef Daniel, they will merge their cooking techniques for an exclusive two-night event at Ocean Club restaurant. Expressing his excitement, chef Matteo said, "Phu Quoc is a new destination for my portfolio, and I am eager to explore all the flavours that this island is known for."

The seven-course dégustation menu commences as chef Matteo and chef Daniel present dishes such as hand-baked focaccina, a cool carpaccio of locally sourced Phu Quoc mantis shrimp with tram mushrooms, and Phu Quoc pepper and wild scampi caviar, to name just a few. Guests can expect dishes in which the chefs' creative vision pays homage to the natural characteristics of their ingredients.

Nestled along the pristine shores of Phu Quoc's Long Beach, where mesmerising views and crystal-clear waters create a picture-perfect backdrop, Ocean Club emerges as a relaxed beach-front venue with a Balearic-inspired atmosphere, offering a delectable array of Mediterranean cuisine and rum-infused cocktails.

At the heart of Ocean Club's culinary excellence is chef Daniel Huynh, whose passion and artistry shine through in every dish he creates. Drawing inspiration from Vietnam's rich cultural tapestry, he skilfully blends international influences with local favourites, resulting in innovative and tantalising creations that truly enchant the senses.
