Head Chef Kasdi Dahari boasts 28 years' culinary expertise, previously serving as head chef at the Hilton Dubai Palm Jumeirah.

This culinary maestro was personally invited by the UAE government to prepare a royal banquet for His Majesty Haji Ahmad Shah Al-Musta'in Billah, the King of Malaysia, during his visit to the UAE.

At the Dubai World Expo in 2022, he was selected to oversee a banquet for the Prime Minister of Malaysia, alongside a host of remarkable achievements including being named among the Top 50 Executive Chefs in the Middle East and receiving the Dubai Star Green Award for culinary innovation and sustainable practices that same year.

The diverse range of ingredients from the north to the south of the country, and the Mekong Delta region, have become an endless source of inspiration and a primary reason for executive chef Kasdi Dahari to join Hilton Saigon.

Additionally, he seeks the opportunity to mentor young Vietnamese chefs to become internationally acclaimed culinary professionals. He noted that the young chefs at Hilton Saigon are all hard-working and eager to embrace new experiences.

"Beyond offering culinary excellence in Hilton Saigon, I aspire to elevate local cuisine to new heights, adhering to Hilton's standards," said chef Kasdi Dahari.

Highlighting the abundance and variety of Vietnamese ingredients, this executive chef has expressed his deep appreciation for them. This serves as the inspiration for crafting the most exquisite dishes at Hilton.

"I strive to bring the finest of Vietnam to our diners. From lobster to chocolate, we meticulously select the top-notch products from various regions across the country. We do business while supporting the local community."

Adding another layer of culinary distinction to Hilton Saigon is pastry chef Bui Thi Quynh, with 20 years' experience working in various renowned hotels.

The pastries at Hilton Saigon are not just desserts; they are infused with life by Pastry Chef Quynh through her fresh, unique ideas and strong sense of the aesthetic. Her journey is that of an intelligent, skilful woman who tirelessly strives to perfect her craft.

Returning to Vietnam in 2020 from the Middle East, Chef Quynh noticed that Vietnamese people were increasingly favouring less sweet pastries, which are healthier. Therefore, she adjusted her recipes to better suit these taste preferences.

"My team and I have created sweet treats for guests to enjoy, which are not only delicious but also healthy, serving as the perfect final touch to a memorable dining experience at Hilton Saigon," said Chef Quynh.

Chef Quynh draws inspiration from the simple joys of life, particularly the warmth and togetherness of family gatherings. This passion fuels her desire to create a culinary space where everyone, from the elderly to the young, will love the dishes at Hilton Saigon.

Dieu Anh, a diner who experienced The Strand restaurant, expressed her fondness for the fresh seafood and enticing desserts available. "At The Strand, the variety of dishes may not overwhelm you, but the quality of the food will leave you in awe," she said.

Meanwhile, Steve Dang, an overseas Vietnamese, commented that the taste of Vietnamese dishes at Hilton Saigon brings him the warmth of family meals that he fondly missed from afar.
